This 1826® two-pan set pairs one 10-inch brushed 18/10 stainless steel frying pan with one 10-inch Exceliss+ non-stick frying pan. Both use Cristel®’s conical 1826 form and 3-ply thermodiffusing induction base, so the set gives the cook two distinct surfaces without duplicating the same job. The stainless pan is the everyday searing and sautéing workhorse; the coated pan is the more specialized choice for eggs, fish, and other delicate foods.
“This is the sensible two-pan foundation: stainless steel for the cooking that benefits from browning and a coated pan for the foods that genuinely need release. Those two roles are more useful than a cupboard full of nearly identical pans.”
